Discovery Beach - Bear Creek Winery, California
Bear Creek Winery was founded in 1934 as a cooperative. In 1997 it was acquired by the Kautz family who completely renovated the winery to make it a state of the art facility to meet contemporary demand. Today, Bear Creek Winery has grown to become the 8th largest family owned U.S. grape grower and winery operation and has earned a reputation as one of the premier custom wine producers in California.
After the Zinfandel grapes are harvested, a “cap and drain” method is used which allows the wine to be in contact with the skins for 6 hours before pressing. It gives the wine a darker colour as well as extracting a greater amount of fruit flavours which is evident in the ripe watermelon, strawberry and cherry that is experienced on the palate. This wine has a balance of floral character, sweetness and crisp acidity.
Parrot Fish - South Africa
Parrotfish wines are made from selected vineyards in South Africa’s Western Cape, where the bracing Benguela current brings cool breezes – perfect conditions for making fresh flavoursome wines.
The Cabernet Merlot is deep purple in colour, an intensely fruity wine with cherry on the nose, followed by flavours of blackcurrant and ripe red berry on the palate.
Produced from South Africa’s signature white grape, the Chenin Blanc is a rich wine with guava, apple and ripe melon flavours and a long lingering finish.
Produced from South Africa’s signature red grape grape variety, this is an intensely fruity wine with strawberry, raspberry and cherry flavours, and a hint of ripe banana and smokiness so typical of Pinotage.
Pale gold in colour the Sauvignon Blanc displays intense aromas of tropical fruit, complimented with hints of gooseberries and green apples. Crisp and medium-bodied with a refreshing finish.
Woolloomooloo - Australia
Woolloomooloo wines are crafted from selected vineyards across South Eastern Australia. The verdant landscape surrounding the vineyards is home to many sheep stations, originally established by Australia’s early settlers and still in operation today.
Light straw in colour, Woolloomooloo Chardonnay displays an enticing nose of peach,citrus and lemon aromas. The tropical fruit flavours and luscious mouth feel mid-palate complement each other to deliver a deliciously rounded wine with a crisp and clean finish balanced nicely by gentle acidity.
Pale lemon in colour, Woolloomooloo Pinot Grigio displays a powerful bouquet of citrus blossom, lime and grapefruit aromas. On the palate, classic Pinot Grigio flavours of green apple, pear and tropical fruits helping to give balance to the wine’s crisp, crunchy acidity prior to a surprisingly long finish untypical of this grape variety.
Opaque and ruby red in colour, Woolloomooloo Shiraz displays a nose of smoky, ripe berry fruits with a touch of mint. Smooth and rich on the palate with spicy flavours of luscious dark berry fruits, the balanced tannins help deliver a tremendously concentrated finish.

Hernö Gin is the most awarded gin in Europe the last three years, with more than 25 international Master and Gold medals. We were awarded Boutique Distiller of the Year and the Contemporary Gin Trophy at International Wine and Spirits Competition 2015 (IWSC) as well as two Gold Outstanding. Hernö Gin Distillery is the first European gin distillery to receive this newly established Trophy and the first distillery to receive two Gold Outstanding in many years.

![]() The Zymurgorium is proud to be Manchester’s first distillery! They have been making the gins for their liqueurs and spirits since January 2015.
The Zymurgorium team use two methods of distillation. Reflux fractional distillation (which makes the pure stuff such as vodka) and potstill (which makes the tasty smelly stuff such as gin). At the moment Aaron and his team are developing their unique distillation unit (patent pending) which is more efficient and transfers more character than any other still on the planet!
